Post your meal plans here! I know a lot of us either make or strive to make a weekly meal plan, soo tell us what's on yours! And post recipes if you're so inclined so that we can find them for our own plans ;). Ooo those do sound amazing, aveera! I haven't planned any meals yet because we had friends over last week and there's still leftover things in the fridge that must go. Plus I still need to go through my amazing new Greek cookbook to make a plan based on that, so this gives me time. However, last night I made this creamy salmon pasta. I used the leftover smoked salmon filet in the fridge and shredded it. Heated it in the frying pan with some spring onions, and then added some chive cream cheese and lemon & pepper-flavored cooking cream. I added a bit more black pepper because I thought the sauce was lacking, and I added dill because it works so well with fish. It works superbly with any kind of pasta imo, but for some reason, we thought pasta made with carrots was a good idea. Technically it was fine, but it made for a slightly sweet dish. Oh well, I'll still eat it and this is how you learn: by trying. |

I never thought of Dill and fish going together. I'm going to try this next time I have tuna or cod (as cod, tilapia, and most other white fish need lots of flavor help in my opinion). Tomorrow I work all day and have to bring my lunch and/or dinner to work. I can get easily overwhelmed by meal planning, but I want to try this recipe and sandwich: 1/2 cup pinto beans, 1 tbsp. salsa, 1/2 tbsp. ground cumin, 1/2 tsp. paprika and mash all-together. I'll try to have it on one or two plain rice cakes with some greenery (spinach, spring mix, kale) and pack some fruit, orange, apple or both. For my light lunch/late afternoon snack, I'm thinking an ounce of cheese and maybe some more fruit? I'm not sure. Like I said, I'm not too good at meal planning. |

The Finns eat dill with so many things, but it goes especially well with salmon or literally any fish (it's true that most fish lack flavor on their own). The first time I had dill and salmon, I was in Cuba lol. We went to a resort restaurant and it was salmon in a creamy, lemony dill sauce. So good. My mom has this easy tuna sandwich recipe that I've loved since I was a kid and I still make it pretty often. You need 1 can of tuna in water, a spring onion (shallot), and a heaped tbsp of mayonnaise. You can also add some ground pepper if you like. I put the tuna in a bowl, mash it up a bit so it's not a huge chunk, then add in the mayo and chopped spring onion. Stir it all and spread on some bread. |

add some pickle and chopped boiled egg to that sandwich and you got a super extra tuna sandwich ;) |

Slowly getting into the practice of meal planning, one meal at a time lol: Today's lunch: chicken breast cooked in chicken broth and with a smear of pesto on top of a kale salad bed with carrots and italian dressing; maybe some cheese on the side or as a snack First meal planned and prepped in quite a long time. Way to go, Mirth! |

I've fallen off the meal plan wagon due to "morning sickness". I used to be so good at it. I miss cooking :( |

I found an old better homes cook book from the 70s, and made a peach cobbler from it just to try it out. BEST COBBLER EVER... I'll be checking out the recipes it has for poultry, there's recipes for whole turkeys and such :o |

So with life being crazier now, I've been meal planning for three weeks out. Mostly just in case my husband gets exposed to COVID-19 at work and we need to completely isolate for 2 weeks. It's made things interesting!
