This Week in Food

I've accepted my fate this week and I made a meal plan and grocery shopped. Which, sidebar, but have any of you tried online grocery shopping with free store pick up? Because I discovered that Walmart will do it today and you order online (which was super easy, it took like 30 minutes and that includes the time it took me to google everything for gluten content), and then schedule a pick up time and then go and they will load it all into your car! For free. I AM SO EXCITED!!!! I never have to step foot into Walmart again or do my own shopping, haha. Like I've seriously texted two people about this because it's so amazing. Anyway, this is what I'm making: French Silk Pie (I realize this is not a meal, but I want to try out a gluten free crust recipe, haha.) Italian Beef and Polenta (Recipe from the most recent issue of Food Network Magazine.) Honey Lime Salmon Tostadas (Recipe adapted from Against All Grain by Danielle Walker.) Coconut Cashew Chicken Fingers with Sweet and Sour Sauce (Chicken recipe from Juli Bauer's Paleo Cookbook.) Bacon Apple Smothered Pork Chops (Recipe slightly adapted from Nom Nom Paleo's Ready or Not!) Shrimp Ramen (VERY loosely using this recipe: http://www.seriouseats.com/2013/09/food-lab-miso-ramen-crispy-pork-black-garlic-sesame-oil.html)
What are you making this week?
P.S. By accepting my fate, I mean the fate that I can no longer subsist on takeout and cook when I feel like it because getting sick every time gluten so much as looks at my plate has smashed that possibility to smithereens. So now I have to feed myself like an adult. |

At least you went to culinary school, Sam! :P I'm busy schooling so I don't get to cook as much as I love to do, and idk what my mother's meal plans in the future are but so far we've had Rice Pizza - gluten free but actually my mom and I like it more than my dad so she made him a hamburger haha and we made pizza xD BBQ's/sloppy joe's Sticky Chicken - my mom said it was a Paula Deen recipe. I'm sure it can be found on the interwebs somewhere. Also GF. At night we've had leftovers, popcorn, rotisserie chicken from the grocery store xD |

When I lived with my cousin she had CD and I learned a lot about gluten free stuff. Do any of the grocery stores near you label food if they are Gluten Free? A Kroger chain in LV and Utah labels ANYTHING gluten free(even outside the organic aisle). It will help you get an idea of what actually is instead of relying on the interwebs. i learned this week cocoa pebbles and fruity pebbles are Gf. I legit was like what?! Haha! Not the healthiest but you learn and it can help with meal prepping. Hebrew National Hot dogs are also GF and sooooo good! But expensive lol.
PS: and this Hawaiian and spam lover, spam is also Gf xD |

Last night I made crab cakes and they turned out pretty good. Even with the GF bread crumbs :P |

My brother made Pad Thai from that same Alton Brown cookbook. I'm not a fan of Thai otherwise I would have tried some. :) I haven't cooked a meal in the kitchen for a long time for reasons, but the last thing I made was a homemade vinaigrette that turned out pretty tasty. |
