Keto Meal Prep Ideas

So I am trying to do keto and I am struggling hard!! Mostly, because I have zero cooking skills or confidence or creativity in the kitchen. My biggest struggle is finding easy recipes that I can make 4-6 serving of a stick in the refrigerator for 'grab and re-heat' lunches and dinners. I also tend to be higher on protein and lower on fat than I need to be... I typically meal prep lunches on Sundays for Mon-Thurs (school days). I also try to meal prep dinners for those days or at least have a plan for an easy dinner on those days. I know a couple of people do keto or have done keto so I was hoping for recipe ideas... even if you have recipes that aren't keto but could be adapted to keto! I'm basically living off chef's salads, tuna salad, egg salad, and chicken with veggies at this point. |

I don't eat keto but I eat pretty low carb/high fat and protein by default, so I have a few possible recipes on my blog! This is keto as long as you leave out the 2 tsp of sugar, and serve it without rice! (You could use cauli rice or just don't use it at all, and eat it like a stew.) If you use chicken thighs instead of breasts it will be even more high fat: https://sizzlingmess.com/2017/12/29/chicken-tikka-masala/ These are basically fat bombs, just make sure you use a keto-friendly barbecue sauce! They hold well in the fridge and reheat decently (a little messy though) to eat a few as a snack: https://sizzlingmess.com/2017/12/11/pepper-bombs/ Also you could do like buffalo chicken dip or pimento cheese on celery sticks! Deviled eggs are also good to make and then have as a snack with lunch or in between meals, and they're little fat and protein bombs too. I either fry (peanut oil or lard) or smoke mine, but you could try baking! They reheat really well under the broiler too. Hopefully that helps! I did strict keto for a while and became fat adapted and then got a little lazier with it, now I do a mixture of lazy/dirty keto and LCHF.
I try to make my meals for two days ahead of time if ever possible. I usually fast through breakfast but bulletproof coffee is popular. Eggs/avocado/bacon is easy.

Right now I am loving spiralized zucchini noodles with homemade alfredo and either steak, chicken, shrimp or even ground beef or lamb or bacon as the protein. If you need to lower your protein start by eating 2/3 of whatever meat that you usually do, then 1/2. As you get fat adapted you really won't be as hungry. My portion sizes have greatly changed the last six months or so. To get higher fat, cook everything in grass fed butter, ghee, or coconut oil. You can also add MCT to coffee, water, whatever other drinks. Sometimes I just throw veggies and shrimp in a pan with heavy whipping cream and garlic and it turns out fantastic. 15 minute meal LOL For quick lunches you could roll up a slice of cheese and a little mayo in a slice of lunch meat. I've been known to pick up a meat and cheese tray if I didn't have time to prep and taking that to work XD OH OH OH if you haven't made cauliflower mashed potatoes or cauliflower mac and cheese both of those are easy and awesome comfort keto foods. Sometimes I'll look at ketofridge.com for ideas because their food always looks awesome. I'll look at regular recipies and just try to substitute what I can too. Keto "crackslaw" is quick and easy too. Ground beef, coconut amino, and cabbage. I have a group I'm in on facebook where my dietician friend posts tons of keto recipies, if you want in on that let me know I can add you. I know you didn't mention this but adding a "B Lean" drink at least once a day to my regular routine has worked wonders for me too. It's ACV, Aloe Juice, water and ultima. I highly encourage you to talk to a health professional before attempting keto :) it can be very dangerous in the long term |
